How Does It Work

Wwhen you introduce the live culture into prepared milk (see how to make your own Bulgarian yogurt), the Streptococcus Thermophilus bacteria goes into action first and prepares the perfect environment for Lactobacillus Bulgaricus, which starts multiplying and slowly turns the milk into genuine Bulgarian yogurt. These two beneficial, transient bacteria work together in the fermentation process that turns milk into a naturally sweet, mildly tangy, smooth, fresh-tasting, custard-like treat. The process takes approximately 6-10 hours to complete.

Storage

The yogurt starter needs to be kept in a cold dark and dry place. Your fridge or freezer works best for this. The recommended storage temperature for the yogurt starter is between 0°F (-18°C) and 40°F (4°C). You can safely store the packs in the freezer for many months or in the fridge for several weeks. Avoid keeping the packs at room temperature for prolonged periods of time as it will decrease the activity of Bacillus Bulgaricus. Unfreezing the starter and freezing it again (even more than once) is ok. Transporting the packs will not damage the live culture inside as it is well insulated. Nevertheless, try to minimize exposure to higher temperatures as much as possible.

Ready-Made Bulgarian Yogurt

This yogurt is made in a certified organic farmhouse creamery in the state of New York. The milk comes from grass fed cows, not treated with artificial hormones. Neither milk powders nor starch thickeners are present. The density and smoothness are achieved by using our own process of making yogurt.

Storage

When set, refrigerate the yogurt and leave it undisturbed for several hours until thoroughly chilled. There will be a watery separation on the top - this is whey. Whey is a liquid that naturally appears in the yogurt. It's a good source of protein and living proof of the existence of probiotics in the yogurt. You can either consume it, mix it back in the yogurt or poor it out. If you desire, you can save it and use it in place of other liquids in cooking.

Finished yogurt will be good for at least 10 days. It is not a good idea to add anything to the yogurt while it is being stored, as this may reduce the beneficial bacteria and cause fermentation. As the yogurt ages, it will become more tart and tangy. It is 100% natural, has no stabilizers or preservatives and it has not been pasteurized after culturing (all of which keep commercial yogurt artificially sweeter longer). If you plan to make yogurt cheese from the yogurt, this should be done within 10 days - before the yogurt becomes too tart.

Note: When purchasing yogurt online, please note that due to the nature of the product its consistency may change during transportation. The yogurt may not have the firm body consistency like the one you purchase from the store. This in no way changes any of the characteristics or the quality of the yogurt, it only changes its physical appearance. The yogurt may also form whey during transportation.

Due to the nature of our products, we have to get them to you as quickly as possible so the bacteria in the yogurt starter is still viable when it gets to you. We also try to keep down the shipping costs in order to save you some money. This is why we use Second Day Air shipping which currently costs $12.50 (in the US). This gives us and you the perfect balance of speed and cost.

Shipping to the US

US domestic shipping will be added automatically to your order. The shipping is $12.50 USD for the yogurt starters (regardless of the quantity) and $14+ USD (depending on weight) for the Bulgarian ready-made yogurt. if you purchase 1 yogurt starter and 3 yogurts for example you shipping costs will be $29.50 USD ($12.50 + $17).

All domestic orders are shipped within 2 days of receiving the order. You will receive an email with the tracking details when your order is processed and shipped.  We use UPS Second Day Air shipping for all yogurt starter orders.

Shipping to the UK

All UK shipping is done through a courier and costs 6.95 GBP. All orders are shipped within 2 days of receiving the order. You will receive an email with the tracking details when your order is processed and shipped.
